Chocolate Almond Mud Cake
INGREDIENTS
Almond Mud Cake
- Water 375 ML
- Dark chocolate 150 GRAMS
- Butter 300 GRAMS
- Sugar 420 GRAMS
- Flour 320 GRAMS
- Coco powder 37.5 GRAMS
- Baking Soda 15 GRAMS
- Chopped Almond 150 GRAMS
- Egg 4 NO
- Vanilla Essence 5 ML
Chocolate Glaze
- Dark Chocolate 250 GRAMS
- Coco butter 100 GRAMS
- Almond flakes 100 GRAMS
Almond Crumble
- Butter 50 GRAMS
- Sugar 50 GRAMS
- Flour 25 GRAMS
- Almond Powder 25 GRAMS
Whipping Ganache
- Whip Cream (35%fat) 300 GRAMS
- Glucose 12 GRAMS
- White Chocolate 100 GRAMS
- Vanilla bean 1 NO
METHOD
Almond Mud Cake
- Pre heat the oven to 180 degree
- Boil water and butter together
- Add chocolate and whisk as the chocolate melts
- Add sugar and continue to whisk in a dough machine. Then, add egg
- Sieve the flour, soda and cocoa powder and add chopped almonds, mix it with the spatula
- Add the mixture into to greased tray and bake it for 60 minutes at 180 degree
Chocolate Glaze
- In a sauce pan add water and place a mixing bowl on the top
- Add chocolate and coco butter, whisk it till the chocolate melts
- Remove from the pan and add the almond flakes
- Pour the mixture on the top of the mud cake
Almond Crumble
- Take a mixing bowl add all the ingredients together and mix it well
- Spread the mixture into the baking tray and bake for 8-10 minutes at 180 degree
- Remove from the oven allow it to cool down
- Crumb it with spoon
Whipping Ganache
- In a sauce pan add water and heat, place a mixing bowl on the top
- Add half cream, glucose, vanilla bean and white chocolate chips in the bowl, whisk till all the chocolate is melted
- Keep the mixture in the refrigerator and allow it to cool
- Once the white chocolate ganache is chilled add rest of the cream and whisk it until the ganache is light and fluffy
- Take a scoop with spoon and place on the top of the crumble
