Delicious Plum Cake by Chef Kaushik Mitra was the response when Today’s Traveller invited Chef Kaushik Mitra, DoubleTree Suites by Hilton Bangalore to share his favourite Christmas Delight.

PLUM CAKE
Preparation time- 15 – 20 mins
INGREDIENTS
- Butter 900 gms
- Brown sugar 1 kg
- Eggs 24 nos.
- Refined Flour 700 gms
- Baking powder 40 gms
- Cocoa powder 100 gms
- Oil 100 ml
- Soaked fruits 3 kg
(raisins, candied peels and cherries, chopped)
METHOD
- Cream butter, brown sugar together with eggs.
- Sift flour, baking powder and cocoa powder together.
- Fold in the flour with egg batter and add soaked fruits into it.
- Add oil mix gently.
- Transfer mixture in to the prepared tin and bake in a pre-heated oven at 180 degree Celsius for 30 to 40 minutes
